Growing up we ALWAYS had a garden, and during the summer we usually had more zucchini than we knew what to do with. So my mom would make her famous zucchini bread.
It was delicious!!
This recipe has been one of my family's favorites for as long as I can remember.
Mom's Famous Zucchini Bread
1 C. oil
2 C. sugar
2 C. zucchini, peeled and grated
3 C. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1/2 tsp. nutmeg
3 tsp. vanilla
1/2-1 C. nuts (optional)
1 C. raisins (optional)
1. Preheat oven to 350 degrees, (325 degrees for dark or glass pans.)
2. Beat together eggs, oil and sugar. Add zucchini and mix well.
3. Add flour, salt, baking soda, baking powder, cinnamon, nutmeg and vanilla. Mix well. Add nuts and raisins if desired.
4. Bake 1 hour in greased loaf pans. Allow bread to cool on wired rack for 10 minutes before removing from loaf pans.
